Light Healthy Fried Rice With Bacon

Ingredients
- 1⁄2 onion
- 1⁄2 red bell pepper (capsicum)
- 2 bacon, middle bacon rashers fat trimmed & sliced
- 1 garlic clove
- 3⁄4 cup broccoli
- 1⁄2 cup carrot
- 3⁄4 cup cooked rice (0.25 cup raw makes up 0.75 cup cooked rice)
- 2 teaspoons soy sauce
- 1 tablespoon sweet chili sauce
Directions
- Cook rice.
- Chop broccoli and carrot to small chunks and cook.
- Cook garlic, onion, capsicum and bacon in pan, using enough water to stop it sticking, if required.
- Add vegetables, soy sauce and sweet chili sauce to pan and stir until warmed through.
