Lemon Meltaways

I clipped this from a Reader's Digest about 3 years ago. It was in an advertisement for Land O Lakes butter. These cookies live up to their name. Lemony and buttery and oh so tender, they almost do melt in your mouth! Prep time includes chill time. Show more

Directions

  1. In large mixer bowl, combine all cookie ingredients.
  2. Beat at low speed, scraping bowl often, until well mixed, about 2 to 3 minutes.
  3. Divide dough in half.
  4. Shape each half into 8x1-inch roll.
  5. Wrap in plastic food wrap.
  6. Refrigerate until firm (1 to 2 hours).
  7. Heat oven to 350.
  8. With sharp knife, cut each half into 1/4-inch slices.
  9. Place 2 inches apart on cookie sheets.
  10. Bake for 8 to 12 minutes or until set.
  11. (Cookies will not brown).
  12. Cool completely.
  13. In small mixer bowl, combine all frosting ingredients.
  14. Beat at medium speed, scraping bowl often, until fluffy (1 to 2 minutes).
  15. Frost cooled cookies.
