Kourougougatses - Cheese Pastries

Yields: 25 pastries
Ingredients
- 3 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup olive oil
- 1⁄2 cup butter, melted
- 1⁄2 cup yogurt, low fat
- 1 egg yolk
Filling
- 2 eggs
- 250 g feta cheese, low fat, crumbled
- 1 cup kasseri cheese, grated
- 3 tablespoons cream
Directions
- Place dry ingredients into a food processor. Mix the wet ingredients and with the motor running slowly add to the flour. Mix until just incorporated. Cover and place in fridge for about 30mins.
- Preheat oven to 180°C.
- Roll out to about 3mm thick. and cut out rounds using a 12cm cookie cutter.
- Beat the eggs for the filling and reserve about 1tbsp. Mix the remaining egg with the filling ingredients . Place about 1 tbsp of filling in each pastry round and fold in 1/2 and press down with a fork for decorative finish.
- Place pastries on baking sheets and brush the reserved egg and bake for about 30 minutes.
