Kim's Broccoli Soup

  1. Wash broccoli. Cut off the hardest/toughest part of end of the broccoli stems. Next, trim the hard bumps off the stem (lengthwise). This should leave you the heads and most tender parts of the stalk. Pick one head of broccoli, trim a bit off the top of the head of broccoli, and reserve to use as garnish.
  2. Next, slice all broccoli stalks and heads thinly and put into pot.
  3. Chop onion and add to pot.
  4. Add 1 teaspoons salt.
  5. Add 1 teaspoons pepper.
  6. Fill pot with water and boil until the broccoli and onions are very soft - about 45 minutes to an hour.
  7. Strain broccoli into a colander.
  8. Add broccoli and chicken broth to blender in small batches. Puree.
  9. When finished with batches, add back to pot.
  10. Put pot back on stove and simmer.
  11. Gradually add heavy whipping cream to the pot. Stir and simmer about 15 minutes.
  12. When ready to serve, pour into bowls and garnish with freshly grated Parmesan cheese and broccoli garnish.
