Husband Pleasing Meatloaf
Ready In: 1 hr 15 mins
Serves: 6
Yields: 1 loaf
Ingredients
- 1 1⁄2 lbs ground beef (I use 80/20 but you can use leaner beef if preferred)
- 1 cup tomato sauce
- 2 eggs
- 1 (2ounce) packet lipton soup mix
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 1 cup onion, dices
- 1⁄2 cup bell pepper, diced
- 1 tablespoon olive oil
- 8 saltine crackers, crushed
- 1⁄2 cup ketchup
Directions
- Heat a 10 inch skillet with the olive oil and saute the onions and bell peppers until softened.
- Allow the mixture to cool while you assemble the rest of the ingredients.
- In a large bowl add the meat, tomato sauce, seasonings, eggs and crackers.
- Mix the ingredients together using a large fork so you don't over compact the meat.
- Next mix in the cooled vegetables.
- Form the meat into a loaf shape on a shallow rimmed backing sheet.
- Top with the ketchup.
- Bake in a 350 degree oven 1 hour.
