Hopping John Soup

Ingredients
- 1 slice bacon, diced
- 1⁄2 cup chopped onion
- 1⁄2 cup thinly sliced celery
- 1 garlic clove, minced
- 1 (16 ounce) can black-eyed peas
- 1 1⁄2 cups chicken broth
- 1⁄4 teaspoon cayenne
- 1⁄4 teaspoon hot pepper sauce
- 1⁄4 cup long grain white rice
- 1 tablespoon chopped parsley
Directions
- In large saucepan, cook bacon. Remove to paper towels. Pour off all but 1 tablespoon of fat.
- Add onion, celery and garlic. Cook until soft. Add black eyed peas, chicken broth, cayenne and hot pepper sauce. Stir in rice.
- Simmer 20 minutes, or until rice is tender. Stir in bacon. Serve garnished with parsley.
