Homemade Broccoli Cheese Soup

Ingredients
- 1 tablespoon butter
- 1⁄2 cup chopped onion
- 1⁄4 cup butter
- 1⁄4 cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- 3 cups fresh broccoli, chopped
- 1 1⁄2 cups carrots, julienned
- 1 cup ham, chopped
- 10 ounces sharp cheddar cheese
Directions
- Sauté onions in 1 tablespoon of butter in a large stockpot. Remove the onions and set aside.
- Melt butter in the same stockpot and then add flour.
- Whisk constantly over medium heat for 3-5 minutes.
- Add the half & half and chicken stock. Simmer for 20 minutes.
- Add the broccoli, carrots, ham and onions. Cook over low heat 20-25 minutes.
- Remove from heat and add the cheese. Stir until all the cheese is melted.
- Serve with your favorite bread, we used French bread from Target.
