Homemade Blinis

Yields: 30 blinis
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 2 eggs
- 1 cup plain yogurt
- salt and pepper, to taste
Directions
- Sift the flour and baking powder into a mixing bowl.
- Beat the eggs and yogurt in another bowl. Pour into the flour mixture and mix well. Season to taste.
- Leave the mixture to chill in the refrigerator for one hour.
- Drop one tablespoon amounts of the batter into an oiled and heated non-stick skillet and cook for 1-2 minutes.
- When small holes form on the surface of the blinis, turn them over and cook for a further minute.
