Hollandaise Sauce

Yields: 3/4 cup

Ingredients

  • 2  egg yolks
  • 13 cup  cream
  • 12 teaspoon salt
  • 1  lemon, juiced
  • 14 cup butter

Directions

  1. Place all ingredients, except butter, into a double boiler.
  2. Stir until mixture begins to thicken.
  3. Remove from heat; stir in butter.
  4. Serve over broccoli or spinache souffle.
  5. This will not curdle and may be kept in the refrigerator.
