Heart Healthy Crustless Quiche

This is a basic recipe that I use to put together a quick breakfast. It makes 6 servings so I freeze the left over slices and then microwave the extra servings throughout the week for a quick and healthy breakfast. Swap out the meat, veggies and cheese for variations. Show more

Yields: 1 Pie

Ingredients

  • 1 (16 ounce) container  liquid egg substitute
  • 12 cup broccoli, chopped
  • 12 cup mushroom, chopped
  • 14 cup cheddar cheese, grated
  • 14 cup bacon, cooked and chopped
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 14 teaspoon thyme

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 9" pie pan with cooking spray.
  3. Mix ingredients.
  4. Pour into prepared pie pan.
  5. Bake for 35 minutes.
