Ingredients
- 1 (16 ounce) box organic pumpkin puree
- 3⁄4 cup liquid organic egg whites or 8 organic egg whites
- 1 tablespoon liquid organic egg white
- 1 cup organic plain icelandic style nonfat yogurt
- 2⁄3 cup organic fat-free evaporated milk
- 1 tablespoon organic vanilla extract
- 3 cups xylitol sugar substitute
- 2 tablespoons organic stevia
- 3 cups organic whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon fair trade organic ground nutmeg
- 1 teaspoon fair trade organic ground ginger
- 1⁄2 teaspoon fair trade organic ground cloves
- 1 teaspoon fair trade organic ceylon ground cinnamon
Directions
- Pre-heat oven to 350.
- Measure xylitol and pulse in blender or food processor until powdered.
- Measure out earth balance and melt it.
- Mix together pumpkin puree, egg whites, yogurt, earth balance, evaporated milk, vanilla, xylitol, and stevia until well blended.
- Whisk or sift all remaining ingredients together in separate bowl.
- Add dry ingredients to wet ingredients and mix until just blended.
- Pour into greased and floured baking pans.
