Healthy Muffins

Ingredients
- 1 1⁄2 cups whole wheat flour
- 1⁄2 cup flax seed meal
- 1⁄2 cup old fashioned oats
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 2 bananas
- 1 egg
- 1⁄3 cup unsweetened applesauce
- 2⁄3 cup low-fat milk
- 1⁄3 cup low-fat plain yogurt
- 1⁄8 honey
- 1 apple
- 1⁄2 cup almonds
Directions
- Preheat oven to 375 and spray muffin tins or use muffin papers.
- Mix the oats with the yogurt and let sit.
- Coarsely chop almonds.
- Cut 1/2 of apple into chunks and grate the other half.
- Smash bananas.
- Mix dry ingredients together. Mix in almonds and apple chunks.
- Warm honey so it's just liquid.
- Mix together honey, bananas, applesauce, grated apple and milk. Add yogurt/oat mixture.
- Mix wet and dry ingredients together.
- Spoon batter into tins.
- Bake at 375 for 20 minutes.
