Grenadian Spice Cake

I used a tube or bundt pan and served it with a spiced whipped cream. I also added a bit more lime zest. Make sure to test for doneness at around 50 minutes depending on what pan you use.   1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. Sift together the flour, baking powder and salt, set aside.
  3. In a medium bowl, cream together the sugar and butter. Beat in the eggs one at a time, then stir in the lime zest, nutmeg, cinnamon and allspice. Add the dry ingredients alternately with the milk, stirring after each addition. Pour batter into the prepared pan.
  4. Bake for 75 to 90 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool in the pan for 10 minutes before turning out onto a rack to cool completely.
