Greek Style Salmon With Avocado Tzatziki

Ingredients
- 24 ounces salmon, cut into 4 portions
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon yogurt
- 1 garlic clove, grated
- 1 teaspoon oregano
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cups avocado tzatziki (recipe below)
Avocado Tzatziki Sauce
- 1 large ripe avocado, mashed
- 1⁄2 cup plain Greek yogurt
- 1⁄2 cup cucumber, peeled, seeded, grated, and squeezed to drain
- 1 garlic clove, grated
- 1 tablespoon fresh dill, chopped
- 2 tablespoons lemon juice (about 1/2 lemon)
- salt and pepper, to taste
Directions
- Avocado Tzatziki Sauce: Mix together all tzatziki ingredients (avocado thru salt & pepper); refrigerate until use.
- The Rest: Marinate the salmon in the oil, lemon juice and zest, yogurt, garlic, oregano, salt and pepper for 20 minutes before placing it on a baking dish
- Preheat oven to 400 degrees F. Place marinated salmon in oven and bake until the salmon just starts to flake easily, about 10 minutes.
- Serve topping with the avocado tzatziki.
