Greek Style Quinoa " Burgers "

Ingredients
- 1⁄2 cup quinoa, rinsed
- 1 medium carrot
- 6 scallions
- 1 (15 ounce) can cannellini beans
- 1⁄4 cup breadcrumbs
- 1 egg
- 1 teaspoon cumin
- salt & pepper
- 2 tablespoons olive oil
- 1⁄2 cup plain yogurt
- 1 tablespoon lemon juice
- 4 pita breads
- 1⁄2 English cucumber
Directions
- Bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12-14 minutes.
- In processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices.
- Form into patties and cook until browned.
- Combine remaining ingredients and serve on pita.
