Greek Deli Kabob

I found this in TOH and I think it would make a great lunch or appetizer. I love that it has meat, cheese and veggie. I did not include the marinating time in the prep. Show more

Yields: 24 skewers

Ingredients

  • 24  roasted red peppers, strips
  • 1  lb  mozarella cheese, cut into 48 1/2inch cubes
  • 24  broccoli florets
  • 24  slices  hard salami
  • 12 cup  greek  vinaigrette

Directions

  1. It might be a good idea to blanch the broccoli first. Put all ingredients in a large ziploc bag and marinate for 4 hours in the refrigerator.
  2. Discard marinade and thread ingredients onto small skewers.
