Gluten Free Chocolate Brownies (With Cinnamon)

I took a muffin recipe and totally changed it into this. It was really good. Almost grain free (and it can be if you sub more flax for the gf flour) and refined sugar free. They are dense brownies. Show more

Ingredients

  • 34 cup flax seed meal
  • 14 cup  chia powder (ground chia seeds)
  • 12 cup  gluten-free flour (sorghum, brown rice, etc)
  • 2  tablespoons  coconut flour
  • 4  tablespoons  unsweetened cocoa powder
  • 2  teaspoons baking powder (gluten free)
  • 1  teaspoon stevia powder (concentrate)
  • 1  tablespoon cinnamon
  • 12 teaspoon salt
  • 4  eggs, beaten
  • 1  cup  vegetable  glycerin or 34 cup honey
  • 14 cup  melted coconut oil
  • 12 cup plain yogurt
  • 1  teaspoon vanilla
  • 13 cup  semi-sweet chocolate chips

Directions

  1. Preheat oven to 350° and grease a 9 x 13 baking pan.
  2. In a medium bowl, combine the dry ingredients (through salt).
  3. In a large bowl, combine the eggs, glycerin, oil, yogurt and vanilla; mix dry ingredients into wet until combined well.
  4. Pour into baking pan and bake, uncovered, 25-30 minutes, or until springy when touched in the center, or a toothpick inserted in center comes out clean; remove to wire rack to cool for about 5 minutes.
