Gingery-Orangey Carrot Squares (Vegan)

Ingredients
- 1⁄2 cup sugar
- 1 cup flour
- 1⁄2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1⁄2 teaspoon ground cardamom
- 1⁄2 teaspoon garam masala
- 1⁄2 teaspoon coriander
- 1 orange, zest of
- 1⁄2 cup brown sugar, packed
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 1⁄2 cups shredded carrots (not too fine)
- 3⁄4 cup vegetable oil
- 1 teaspoon vanilla
- 1 orange, juice of
Directions
- 1. Mix the dry ingredients.
- 2. Add the carrots, vanilla and the oil, in that order.
- 3. Add the orange juice.
- 4. Place mix in greased 10 inch square tray, even out and bake for 60 minutes at 180C or 350°F It won't rise but it'll be done when you insert a knife and it comes out clean.
