Garlic Roast Potatoes

Ingredients
- 8 tablespoons light olive oil
- 3 lbs potatoes, peeled and cut into large chunks
- 3 bay leaves
- 1 head garlic, cloves separated and flattened with the back of a knife
Directions
- Heat the oil in a large roasting tin in an oven set to 350°F.
- Boil the potatoes and bay leaves in a pan of lightly salted water then simmer for 10 mins until tender.
- Drain the potatoes in a colander, shaking them around in order to fluff up the outsides.
- Tip the potatoes into the hot oil, add the garlic cloves and roast in the oven for 1 hour 20 minutes.
