Funggi (Swiss Potatoes and Apples)

Adapted from Pan American's Complete Round the World Cookbook. Serve as a side dish for meat.

Directions

  1. Combine apples, sugar and water in a saucpan.
  2. Bring to a boil.
  3. Cook for 3 minutes.
  4. Melt butter in a large saucepan.
  5. Add onions.
  6. Saute for 10 minutes, stirring frequently.
  7. Add potatoes, salt, cider and apple mixture, including any liquid.
  8. Cover and cook for 30 minutes, or until very soft.
  9. Serve hot.
