Fresh Winter Citrus Salad

Ingredients
DRESSING
- 2⁄3 cup plain yogurt
- 1⁄4 cup extra virgin olive oil
- 2 tablespoons red onions, finely chopped
- 1 tablespoon pomegranate molasses
- 1 tablespoon honey
- 1⁄2 teaspoon ground rosemary
- 1⁄2 teaspoon black pepper, to taste
- 1⁄8 teaspoon sea salt
SALAD
- 4 leaves kale, washed and drained
- 1 large carrot, peeled
- 1 medium grapefruit, peeled, pith removed and segmented
- 1 large mandarin orange, peeled, pith removed and segmented
- 1 medium navel orange, peeled, pith removed and segmented
- 1 large kiwi fruit, skin removed and wedged
- 1⁄2 cup feta cheese, crumbled
- 2 tablespoons pomegranate seeds
- 2 tablespoons slivered almonds, toasted
Directions
- To make the dressing: In a mixing bowl, combine all ingredients and whisk until well blended.
- Transfer to the refrigerator for 2 hours.
- To assemble the salad: Place in order all the ingredients evenly on two plates.
- Drizzle the chilled dressing over and garnish with toasted slivered almonds. Serve 2.
