Fresh Pea Soup

Ingredients
- 4 cups water or 4 cups broth
- 1 cup fresh peas, shelled
- 1⁄2 cup soft garlic and herb-flavored cheese
- salt
- plain yogurt (thinned with milk for drizzling)
- fresh mint sprig (to garnish)
Directions
- Heat water in small saucepan to boiling.
- Add peas and cook until just tender, 2-3 minutes.
- Carefully puree soup and cheese in blender.
- Pass through a food mill or sieve into a bowl. Season to taste with salt if needed.
- Ladle into bowls, drizzle with yogurt and garnish with mint.
