Eggplant With Peppers and Beans

Ingredients
- 1 eggplant, Thinly Sliced
- 1⁄4 cup olive oil
- salt
- pepper
- 1 garlic clove, Minced
- 1⁄2 teaspoon cayenne pepper
- 1 cup cannellini beans, Mashed
- 1 garlic clove, minced fine
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- roasted red pepper
- spinach or romaine lettuce
- focaccia bread
Directions
- Brush oil, garlic, salt, pepper and cayenne pepper mixture on thinly sliced eggplant and roast on a baking sheet in a 400* oven for 20-25 minutes. Amazing if grilled, If using English Eggplants, bleed first.
- Combine Bean mixture and Mash.
- On toasted slices of Foccacia, layer eggplant, roasted red pepper, lettuce/spinach and Bean Mash.
