Eggless Pancakes

Yields: 12 pancakes
Ingredients
- 1 cup flour
- 1⁄2 cup whole wheat flour
- 1⁄2 cup cornmeal
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon active dry yeast
- 3⁄4 cup milk
- 3⁄4 cup plain yogurt
- 1⁄2 teaspoon vanilla
- 1 tablespoon oil
- 3⁄4 cup cooked oatmeal
- 3⁄4 cup berries (optional)
Directions
- Mix together dry ingredients.
- In another bowl, mix milk, yogurt, vanilla, and oil.
- Put the 2 bowls together, and stir just enough to moisten.
- Stir in cooked oatmeal.
- Fold in berries (if desired). (You can use frozen berries, just defrost them first.).
- Cook on a medium-high griddle, with butter.
