Easy Meatloaf

Beef & Mushroom Meatloaf Usually about 1/3-1/2 of the volume of "meat" in this dish is actually mushroom to give you an idea of how much I add, I never really measure the mushroom part. I don't like mushrooms so I do this in all of my beef recipes to hide them, I can't tell they are there (your picky eaters wont be able to tell either!) They make the dish taste amazing--the same recipe without them just isn't as good! Show more

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Finely chop mushrooms and saute in a little oil or butter.
  3. In a large bowl, combine the beef, mushrooms, egg, milk and bread crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
  4. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  5. Bake at 350 degrees F (175 degrees C) for 1 hour.
