Curried Corn and Sweet Red Peppers

Ingredients

  • 3  tablespoons butter
  • 14 cup  chopped  sweet red pepper
  • 1 (15 1/4ounce) can whole kernel corn, drained (I use frozen corn)
  • 1  teaspoon curry powder
  • 18 teaspoon salt
  • 18 teaspoon pepper
  • 14 cup  whipping cream

Directions

  1. Melt butter in a skillet over medium heat; add red pepper and cook, stirring constantly until tender.
  2. Stir in corn, curry powder, salt and pepper. Cook 3 minutes, stirring often.
  3. Stir in whipping cream; cook, stirring constantly until thickened.
