Curried Carrots

Ingredients
- 2 tablespoons oil
- 2 medium onions, thinly sliced
- 2 garlic cloves, crushed
- 2 teaspoons curry powder
- 6 large carrots, thinly sliced
- salt
- 1 granny smith apple, peeled, cored & grated
- 1⁄2 cup chicken stock
- chopped parsley
Directions
- Heat oil & fry onions and garlic until softened, add curry powder and stir over a low heat for 2-3 mins, add the carrots & salt to taste.
- Cover & simmer for 5 minutes Add the apple & stock.
- Cover & cook gently until carrots are done, stirring occasionally, sprinkle with parsley.
