Cucumbers With Yogurt and Mint

I haven't tried this yet, but it looks fresh and crisp- perfect for a warm summer day. It looks like it could make a nice topping on grilled chicken or fish. Show more

  1. Combine first cucumber with salt in bowl and let sit for 2 hours in fridge.
  2. Drain off excess fluid then mix remaining ingredients a large bowl; stir well.
  3. Add cucumber; toss gently to coat.
  4. Cover and chill 30 minutes.
