Cucumber Salad Persian Style

Serves: 4-6
Ingredients
- 3 peeled cucumbers
- 2 1⁄2 cups plain yogurt
- 3 spring onions, finely chopped
- 3⁄4 cup raisins
- 1⁄2 cup walnuts
- salt and pepper
- 1 teaspoon dried mint
Directions
- Halve and deseed cucumbers.
- Dice cucumbers and sprinkle with salt.
- Leave to drain 20-30 minutes.
- Rinse cucumbers, dry and place in a bowl.
- Mix in yoghurt then remaining ingredients.
- Cover and chill 1-2 hours.
