Cucumber Raita

Yields: 4 cups
Ingredients
- 1 cucumber (7-inch)
- 3 cups yogurt
- 1 teaspoon cumin seed
- 1 teaspoon salt
- 1 dash cayenne
Directions
- Peel, seed, and coarsely grate cucumber.
- Roast cumin seeds in heavy skillet for about 5 minutes. Grind in spice grinder or with mortar and pestle.
- Combine all ingredients and chill.
- Garnish with fresh mint leaves.
