  1. Peel, seed, and coarsely grate cucumber.
  2. Roast cumin seeds in heavy skillet for about 5 minutes. Grind in spice grinder or with mortar and pestle.
  3. Combine all ingredients and chill.
  4. Garnish with fresh mint leaves.
