Crockpot Spaghetti Sauce With Fresh Tomatoes

Yields: 4 quarts
Ingredients
- 4 onions, chopped
- 4 garlic cloves, minced
- 1 green pepper, chopped
- 1⁄2 cup oil
- 16 cups fresh roma tomatoes, peeled and chopped
- 2 tablespoons oregano
- 2 tablespoons basil
- 1⁄4 cup parsley, chopped
- 1⁄4 cup sugar
- 2 tablespoons salt
- 3⁄4 tablespoon black pepper
- 6 ounces tomato paste
Directions
- Saute the onion, garlic, green pepper, and oil. Cook until onion is transparent.
- Add the chopped tomatoes, oregano, basil, parsley, sugar, salt, and ground pepper.
- Cook on low heat for 2 to 3 hours. Stir frequently.
- Let sauce cool. Pour into quart size freezer containers. Store in freezer.
- When ready to use, stir in can of tomato paste.
