Crispy Fish With Chipotle Cream

Ingredients
- 1⁄4 cup plain yogurt
- 1⁄4 cup mayonnaise (NOT Miracle whip)
- 1 chipotle pepper, minced, plus
- 1 teaspoon adobo sauce
- 1 teaspoon sugar
- salt and pepper
- 1 large avocado
- 1 cod fish fillet, de-boned
- 1⁄2 cup plain breadcrumbs
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 lime
- salt and pepper
- 1 tablespoon oil (or cooking spray)
Directions
- Squeeze lime juice over filet and allow to sit for a minute. Salt and pepper lightly.
- Mix breadcrumbs, garlic powder and paprika. Coat filet with breadcrumb mixture.
- Cook fish in skillet over medium heat until crust is golden brown and fish is flaky but still firm, about 3-5 minutes a side.
- While fish is cooking, mix the first five ingredients well.
- Serve fish over sliced avocado with chipotle sauce.
