Creamy Rice Salad

Yields: 2 1/2 cups
Ingredients
- 1 1⁄2 boiled rice
- 4 spring onions, thinly sliced (scallions)
- 2 tomatoes, chopped
- 8 pitted green olives, sliced in three rounds
- 8 pitted black olives, sliced in three rounds
- 1⁄2 cup savoury mayonnaise (not sweet, try Thomy or Hellmans)
- 1⁄2 cup plain yogurt
- 1 tablespoon cajun spices (or taco or burrito spice with a bit of chilli powder added)
- 1 teaspoon vegetable bouillon granules
- 1 teaspoon ground coriander
- salt and pepper
Directions
- Mix everything together in a bowl and serve.
