- Half fill a large saucepan with hot, salted water, add the oil, and bring to the boil. Throw in the pasta, stir and boil gently for 5-8 minutes until the pasta is cooked al dente, but not soggy. Drain the pasta in a colander or sieve.
- Put the cream or curd cheese, yoghurt or cream, and nuts into the pasta saucepan, and stir over a very low heat until it is just beginning to melt. Add the pasta to the cream mixture and stir over a low heat until coated with the cheese mixture.
- Season to taste and serve on a warm plate, topped with a shake of paprika.
