Creamy Cucumber & Mint Dressing

Very nice on bitter greens.

• Yields: 1 c.

Ingredients

• 1⁄2 cup nonfat plain yogurt
• 1⁄4 cup buttermilk
• 3  tablespoons fat-free mayonnaise
• 1⁄3 cup cucumber, finely diced
• 1  tablespoon of fresh mint, finely chopped
•  salt, optional
•  pepper

Directions

1. Firm, small-seeded European cucumbers work best in this dressing.
2. If your cucumbers have large seeds, remove them before dicing.
3. In a small bowl, stir ingredients together until evenly blended.
4. Spoon over greens.
