Creamy Carrot & Orange Soup

Lovely velvety soup, mysterious flavor. Good starter for a cornish hen dinner

Serves: 2

Ingredients

  • 2  tablespoons butter
  • 1  cup onion, chopped
  • 1  lb carrot, peeled and sliced & cooked
  • 2  cups  chicken stock
  • 12 cup  fresh orange juice
  •  salt and pepper
  • 14 teaspoon ground nutmeg
  • 4  tablespoons  whipping cream or 4  tablespoons yogurt
  •  grated  orange rind (for garnish)

Directions

  1. Brown the onion in the butter until soft.
  2. Put onions carrots and chicken stock in a sauce pan.
  3. Add Orange juice, heat to meld the flavors.
  4. Puree in a food processor until very smooth season with salt& pepper and Return to saucepan and blend in the nutmeg.
  5. Bring to a boil stirring during cooking time.
  6. To serve top and swirl in two tbsp of cream (or yogurt).
