Creamed Tuna With Pasta

Ingredients
- 7 ounces penne pasta
- 2 tablespoons oil
- 2 shallots, chopped
- 1 green pepper, deseeded and chopped
- 4 ounces mushrooms, chopped
- 7 ounces canned tuna, drained
- 3 tablespoons heavy cream
- fresh ground black pepper
- 12 basil leaves, shredded
Directions
- Cook the pasta in plenty of boiling water, according to the pack instructions.
- Meanwhile, heat the oil in a small frying pan and cook the shallots and green pepper until soft. Add the mushrooms and cook for 2-3 minutes more.
- Stir in the tuna and cream and heat through. Season to taste.
- Drain the pasta and toss with the tuna sauce. Garnish with basil and serve.
