Cracked-Wheat Apple Chicken Salad

Ingredients
- 3 cups water
- 1 1⁄2 cups cracked bulgur wheat
- 2 apples, cut up
- 2 tablespoons lemon juice
- 6 tablespoons parsley, chopped
- 4 tablespoons mint leaves, chopped
- 1⁄2 cup walnuts
- 1 teaspoon salt
- pepper, to taste
- 2 cups chicken breasts
- 1⁄4 cup scallion, sliced
- 1⁄4 cup lemon juice
- 3 tablespoons olive oil
Directions
- Boil water. Pour over bulgur. Let stand for 45 minutes. Press out excess water. Let cool.
- Pour 2T lemon juice over cut-up apples. Tart, crisp apples like Braeburn are best.
- Chop and toast walnuts at 325. Let cool.
- Cook chicken breasts, let cool, cut into cubes. Poaching works well.
- Mix 1/4 cup lemon juice and 3T olive oil for dressing.
- Combine all ingredients and mix well. Chill. Tastes best after sitting several hours. Store in refrigerator.
