Corn Bread Tamale Pie

Ingredients
Filling
- 1 lb lean ground beef
- 1 medium onion, chopped
- 1 (8 ounce) can tomato soup
- 1⁄4 teaspoon salt
- 1 tablespoon chili powder
- 1 cup frozen whole kernel corn
Cornbread crust
- 3⁄4 cup cornmeal
- 1 tablespoon flour
- 1 tablespoon sugar
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons baking powder
- 1 egg, beaten
- 1⁄3 cup milk
- 1 tablespoon oil
Directions
- Preheat oven to 425 degrees F. Saute beef and onion together in a skillet until browned. Drain fat. Add soup, salt, chili powder and corn. Simmer 15 minutes. Pour into a greased 2 quart casserole dish or a 9" pie plate.
- In a mixing bowl combine cornmeal, flour, sugar, salt, baking powder, egg, milk and oil. Stir until just moistened. Spread cornmeal mixture over beef mixture. Bake in preheated oven for 25 minutes or until browned.
