Christmas Tree Cookies

One of Mom's co-workers at Firestone Tire & Rubber, in the Public Relations department, shared this sugar cookie recipe, and it is our "go to" recipe for cutouts. The co-worker always made them into Christmas trees, hence the name, but it's a great recipe for cutouts. The dough will be very stiff after adding all the flour, and it's a good idea to divide it into about 4 disks before chilling, to make it a bit easier to roll out.   1. Allow butter to soften in large bowl. Add sugar and lemon zest, and cream until light and fluffy. Add eggs and mix well. Stir in flour gradually, mixing well after each addition.
  2. Chill dough for 30-60 minutes before rolling out. Cut into desired shapes, and place on ungreased cookie sheets. Bake in pre-heated 350 degree oven for 8-10 minutes.
  3. Cool on rack. Cookies can be frosted after they are completely cool.
