Chopped Broccoli Salad

Yields: 6 cups
Ingredients
- 3 cups broccoli florets, chopped
- 1⁄2 cup red onion, chopped
- 1⁄2 cup bell pepper, chopped
- 1 small carrot, grated
- 1⁄2 cup water chestnut
- 1⁄4 cup chopped walnuts
- 1⁄4 cup raisins
- 3 tablespoons fat-free mayonnaise
- 3 tablespoons fat-free half-and-half
- 2 envelopes splenda artificial sweetener
- 1 dash vinegar or 1 dash lemon juice
- 2 tablespoons imitation bacon bits
- 2 -3 tablespoons fat free grated cheese
Directions
- Chop all vegetables. Add walnuts and raisins, mix well. Prepare dressing with mayo, half and half (or milk) Splenda and vinegar. Add bacon bits and or cheese as desired. Pour over salad and refrigerate several hours or overnight.
