Chilled Melon Soup With Mint (South Beach Diet Phase 2)

Ingredients
- 5 cups honeydew melon, chopped
- 1 large cucumber, peeled and chopped
- 1⁄2 cup low-fat yogurt or 1⁄2 cup nonfat yogurt
- 2 scallions, roughly chopped
- 1 tablespoon fresh lemon juice
- 2 teaspoons fresh grated lemon zest
- 2 tablespoons of fresh mint, chopped
Directions
- In a blender, puree honeydew melon until smooth. Add cucumber, yogurt, scallions, lemon juice, and lemon zest and puree until smooth. Transfer to a covered container and refrigerate until chilled.
- Sprinkle with mint and serve.
