Chilled Cantaloupe Soup

Serves: 4-6
Ingredients
- 2 cantaloupes, peeled and cubed
- 1⁄3 cup sugar
- 2 ounces ironworks arctic kiwi liqueur
- 2 tablespoons .fresh squeezed lime juice
- 1 teaspoon coarse sea salt
- 4 teaspoons sour cream
- 1 fresh mint sprig
Directions
- Place cantaloupe in a food processor or blender. Add sugar, liqueur, lime juice and salt. Purée.
- Chill for one hour.
- Place in serving bowls, top with sour cream and a fresh mint leaf.
- makes 4-6 servings.
