Chicken & Broccoli Casserole

Ingredients
- 1 (10 1/2ounce) can cream of mushroom soup
- 3⁄4 cup rice
- 1 cup low sodium chicken broth
- 4 ounces cheese, cut in tiny cubes
- 8 ounces frozen broccoli, pieces
- 1 lb boneless skinless chicken breast, cut in pieces
- salt & pepper
top with
- crushed crackers (optional) or chips (optional) or goldfish crackers (optional) or breadcrumbs (optional)
Directions
- Preheat oven to 375.
- Mix everything except the topping in 3 quart casserole dish. Top with whatever you wish, or nothing. Cook, covered 30 minutes. Uncover. Bake another 30 minutes or until top is brown and chicken is cooked.
