Chicken & Broccoli Casserole

Simple, delicious, comforting dinner. I came up with this when I couldn't find exactly what I was looking for. I use Amy's Cream of Mushroom Soup and organic meat and vegetables. Yum yum!! Show more

Serves: 4

Yields: 8 cups

Ingredients

  • 1 (10 1/2ounce) can  cream of mushroom soup
  • 34 cup rice
  • 1  cup low sodium chicken broth
  • 4  ounces cheese, cut in tiny cubes
  • 8  ounces  frozen broccoli, pieces
  • 1  lb boneless skinless chicken breast, cut in pieces
  •  salt & pepper
  • top with

  •  crushed  crackers (optional) or   chips (optional) or   goldfish crackers (optional) or   breadcrumbs (optional)

Directions

  1. Preheat oven to 375.
  2. Mix everything except the topping in 3 quart casserole dish. Top with whatever you wish, or nothing. Cook, covered 30 minutes. Uncover. Bake another 30 minutes or until top is brown and chicken is cooked.
