Chia Ocotea Baked Oatmeal

Ingredients
- 1 cup cooked steel cut oats
- 1 1⁄4 cups almond meal
- 1 egg
- 5 tablespoons butter, softened
- 1⁄2 teaspoon vanilla
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon cream of tartar
- 1⁄2 cup maple syrup
- 1⁄4 cup chia seeds
- 1⁄4 cup yogurt
- 3 drops ocotea young living essential oils
Directions
- Preheat oven to 350 degrees. Beat together butter, egg, vanilla, syrup and yogurt. Add remaining ingredients. Pour into a greased 8X8 pan or two smaller ones for a thinner serving. Bake for 25-30 minutes until browned. Set aside to cool for 5-10 minutes and serve plain or with milk and walnuts.
