Cheese Scalloped Baby Carrots

Just plain good, simple and delicious!

Ingredients

  • 5  cups  sliced raw  baby carrots
  • 1  cup  chopped onion
  • 12 cup butter
  • 12 lb Velveeta cheese, grated
  • 12  Ritz crackers, crushed

Directions

  1. Boil carrots til done, drain. Saute onion in butter til softened.
  2. In small baking dish, layer half of carrots, then half of cheese, repeat.
  3. Pour onions and butter over top. Sprinkle with crushed Ritz crackers.
  4. Bake at 350º, uncovered, for 30-40 minutes or til carrots are tender.
