Cheese Muffins Revisited

Ingredients
- 1 cup coarse cornmeal (use of regular cornmeal will result in denser texture)
- 1⁄2 cup unbleached flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 2 eggs
- 1⁄3 cup oil
- 3⁄4 cup yogurt
- 1 cup feta cheese, crumbled
Directions
- Mix dry ingredients in a bowl.
- Separately, mix eggs, oil and yogurt. Tip: For fluffier texture, beat the mixture lightly.
- Add feta cheese and egg mixture to the dry ingredients and mix lightly until consistent, yet fluffy, runny mixture is achieved.
- Pour the mixture into greased muffin tins 2/3 full.
- Bake 30 minutes at 400 deg F.
