Chantri's Poppy Seed Chicken

After sampling this dish I felt I had to have the recipe. Even better the next day!

Serves: 4

Ingredients

  • 4  chicken breasts
  • 1  can  cream of mushroom soup (low fat/low sodium ok)
  • 8  ounces sour cream (light OK - NOT fat-free)
  • 2  packages  round  buttery crackers (I like Ritz - low fat OK)
  • 12 cup butter or 12 cup margarine
  • 1  tablespoon poppy seed
  •  salt and pepper

Directions

  1. Preheat oven to 350*.
  2. Poach chicken until no longer pink.
  3. Shred chicken and season with salt& pepper to taste.
  4. Add soup and sour cream to shredded chicken.
  5. Mix well.
  6. Set aside.
  7. Crush crackers into fine crumbs.
  8. Add poppy seeds.
  9. Melt butter.
  10. Combine well with cracker/poppy seed mixture.
  11. Set aside.
  12. Spread chicken mixture in bottom of 9x13 baking pan.
  13. Cover evenly with cracker topping.
  14. Bake uncovered for 15-20 minutes at 350*.
