Ingredients
- 1 1⁄2 cups cooked rice
- 1⁄4 cup milk
- 1⁄2 teaspoon vanilla extract
- 1⁄2 cup sugar
- 1 1⁄2 cups self-rising flour
- 3 large eggs, lightly beaten
- 1⁄2 teaspoon nutmeg
- oil, for frying
- powdered sugar, for dusting
Directions
- Place rice in medium bowl.
- drizzle milk over the rice and mash until almost smooth.
- Add next 5 ingredients (vanilla through nutmeg), beat until smooth.
- Fry in hot oil (350°F) until golden brown, about 2 1/2 minutes, turning once.
- Dust with powdered sugar.
- Serve hot.
