Cabbage With Turkey Bacon and Mustard

This started as me trying to deconstruct a BLT (no mayo, add mustard)...

Serves: 5-8

Yields: 1/2 cup

Ingredients

  • 1  medium cabbage, chopped into bite-sized pieces
  • 34 lb  turkey bacon, chopped into bite-sized pieces
  • 2  tablespoons  coarse grain mustard
  • 2  garlic cloves, minced
  • 1  tablespoon canola oil
  • 14 cup mirin
  • 2  tablespoons tamari
  • 14 cup milk, divided
  • 1  tablespoon flour
  • 12 cup water
  •  pepper
  • 1  cup tomatoes, chopped

Directions

  1. Heat canola oil in large skillet on medium-high heat.
  2. Cook bacon until slightly crisped.
  3. Add garlic and stir until fragrant.
  4. Deglaze pan with mirin.
  5. Turn heat down to medium.
  6. Add flour.
  7. Add half of the milk.
  8. Stir to thicken for about one minute.
  9. Add other half of the milk with the mustard.
  10. Stir to mix thoroughly.
  11. Add cabbage.
  12. Stir and cook on medium-high heat for about 3 minutes until cabbage is tender.
  13. Add tamari and water to steam the cabbage a bit more.
  14. Cook for another 3-5 minutes.
  15. Season with pepper.
  16. Put mixture on serving dish.
  17. Garnish with chopped tomatoes.
